Ingredients:
-2 tablespoons olive oil
-1 onion, diced
-2 cloves garlic, minced
-2 carrots, diced
-2 stalks celery, diced
-1 zucchini, diced
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/2 teaspoon dried thyme
-1/2 teaspoon red pepper flakes
-4 cups vegetable broth
-1 can (14.5 ounces) diced tomatoes, with juice
-1 can (15 ounces) cannellini beans, drained and rinsed
-1 cup frozen corn
-Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large stockpot over medium heat.
2. Add the onion, garlic, carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally, until the vegetables are softened.
3. Add the oregano, basil, thyme, and red pepper flakes. Cook for 1 minute, stirring frequently.
4. Pour in the vegetable broth and diced tomatoes with juice. Bring to a boil, then reduce the heat to low. Simmer for 15 minutes.
5. Add the cannellini beans and frozen corn. Simmer for an additional 10 minutes.
6. Season with salt and pepper, to taste.
