Warm Up with This Delicious Tomato Bisque Recipe

Tomato Bisque is a classic soup that is both comforting and delicious. It’s easy to make and is perfect for a cold winter day. This recipe yields a creamy, flavorful bisque that is sure to warm you up.

– 2 tablespoons olive oil
– 1 onion, chopped
– 1 carrot, chopped
– 2 cloves garlic, minced
– 2 (14.5 ounce) cans diced tomatoes
– 1 (14.5 ounce) can tomato sauce
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1/2 teaspoon sugar
– 1/4 teaspoon salt
– 1/4 teaspoon ground black pepper
– 2 cups vegetable broth
– 1/4 cup heavy cream

1. Heat the olive oil in a large pot over medium heat. Add the onion and carrot, and cook until softened, about 5 minutes. Add the garlic and cook for another minute.

2. Add the diced tomatoes, tomato sauce, oregano, basil, sugar, salt, and pepper, and stir to combine. Pour in the vegetable broth and bring to a simmer. Simmer for 15 minutes.

3. Remove the soup from the heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.

4. Return the soup to the pot and stir in the cream. Simmer for another 5 minutes, stirring occasionally.

5. Serve the soup hot, garnished with fresh herbs if desired. Enjoy!
