Easy peanut noodles in just 10 minutes!

Easy peanut noodles in just 10 minutes!

  • 1/4 creamy peanut butter
  • 3 tbsp low sodium tamari (gluten-free soy sauce)
  • 1 tsp sesame oil
  • 2 tbsp maple syrup
  • 1/2 tsp chili paste
  • 2 garlic cloves (minced)
  • 1/8 tsp ground ginger
  • 2 tbsp water
  • 7 oz. rice noodles
  • Toppings: peanuts (sesame seeds, sliced green onion)
  1. Bring a medium-sized pot of water to a boil
  2. Remove water from heat and place rice noodles in water for 10 minutes stirring occasionally
  3. While noodles are cooking place peanut butter, tamari, sesame oil, maple syrup, chili paste, garlic, ginger and 2 tbsp of water in a high-speed blender and blend until smooth
  4. Once noodles are cooked add to a large bowl and toss with peanut sauce
  5. Top with crushed peanuts, sliced green onion, and sesame seeds
