Easy peanut noodles in just 10 minutes!
- 1/4 creamy peanut butter
- 3 tbsp low sodium tamari (gluten-free soy sauce)
- 1 tsp sesame oil
- 2 tbsp maple syrup
- 1/2 tsp chili paste
- 2 garlic cloves (minced)
- 1/8 tsp ground ginger
- 2 tbsp water
- 7 oz. rice noodles
- Toppings: peanuts (sesame seeds, sliced green onion)
- Bring a medium-sized pot of water to a boil
- Remove water from heat and place rice noodles in water for 10 minutes stirring occasionally
- While noodles are cooking place peanut butter, tamari, sesame oil, maple syrup, chili paste, garlic, ginger and 2 tbsp of water in a high-speed blender and blend until smooth
- Once noodles are cooked add to a large bowl and toss with peanut sauce
- Top with crushed peanuts, sliced green onion, and sesame seeds
